I want to spray the trim with latex semi-gloss then come back and roll the walls with latex satin and roll the ceilings with a flat. Will this work? Will the sheens be affected by laying a lower sheen on a higher sheen?

While painting a ceiling I tried to go over a bad spot (it wasn’t as dry as I thought it was) and I pulled a silver dollar size chunk out. It looks awful, what are my options (touch up) without painting the entire ceiling again?
